Weight Watchers - Week 17


Stuffed Pepper Casserole - 10 points.  I would substitute 2 cups of cooked brown rice and 4 cups of my own spaghetti sauce for the specific products they call for in the recipe.  Serve with a salad dressed with lemon juice or low-fat dressing (2 points for 2 tablespoons). Add-ons for family could be bread and/or dessert.

Baked Pork Chops - 7 points. This is a recipe off the Weight Watchers 77 Recipes site (which has a lot more than 77 recipes).  If you click on any one of the recipes shown on the home page, it takes you to a page with that complete recipe but also a side bar that allows you to search according to the total number of points in the recipe. I haven't made this, but it looks really easy and delicious.  Serve with a side of roasted veggies or a salad with light dressing (2 points for 2 tablespoons).  Add ons for family could be potatoes, rice, bread and/or dessert.


Easy Chicken Pot Pie - 4 points (1/4 recipe, store bought cream of mushroom soup).  This is really easy, and you can use whatever combination of veggies you like, the more the better.  Serve over 1/2 cup cooked potato (2 points), 1/2 cup cooked rice (3 points), 1/2 cup cooked egg noodles (3 points), or simply a slice of bread (2 points). This is a great dish to make extra for the freezer.  If you package the freezer portion in a gallon-sized baggie and press as flat as possible before freezing, it doesn't take long to thaw. Add-ons for family could be extra rice, noodles, etc. and/or dessert.

Roasted Salmon with Tomato Basil Relish - 6 points (4 oz. of salmon).  The recipe as shown calls for 1 1/2 pounds of salmon for 4 servings, but using just a pound will allow 4 good servings.  If you use the 1 1/2 pounds for 4 serving, your points will increase to 8.  Spraying the fillets with Pam instead of coating them with oil will reduce each serving by 1 point.  Serve with roasted veggies, cole slaw or a salad with reduced fat dressing (2 points), or other veggie side dish.  Add-ons for family could be potatoes, rice, potato salad, bread and/or dessert.

Southwestern Black Bean Casserole - 8 points. This is a good meatless entree, and the beans provide plenty of good protein.  Serve with a salad with reduced fat dressing (2 points) or top with chopped tomatoes, shredded lettuce or cabbage and/or 2 tablespoons light sour cream (2 points).  Add-ons for family could be tortilla chips, bread, and/or dessert.

Ravioli Vegetable Soup - 8 points. This is a hearty soup that goes together quickly and has lots of good veggies.  You could experiment with adding more or different combinations of veggies.  The recipe doesn't specify but I would say this would make 4 servings.  Add-ons for family could be crusty bread and/or dessert.
