Weight Watchers - Week 15


Taco Casserole - 9 points (1/8 recipe, use 1 pound ground beef, 3 cups beans, 6 tortillas and 1 cup extra-sharp cheddar).  Serve with salsa, chopped tomatoes and shredded cabbage or lettuce as toppings.  Add ons for family could be tortilla chips, Spanish rice and/or dessert.


Ham Fried Rice - 8 points (3/4 cup rice, 1 oz. ham, 1 egg, 1 teaspoon oil).  Add lots of veggies to make this a filling and balanced meal.  This is a great way to turn leftovers into a completely new dish, and you can use any meat (or none), and little bits of fresh, frozen or leftover veggies.  As long as you have cold cooked rice on hand, this only takes a few minutes to make. Add ons for family could be bread and/or dessert.

24 Ways to Cook a Spring Chicken - This is a selection of 24 recipes of spring-like (lighter) ways to fix chicken, and they all look so good I couldn't help but share all of them.  I am obviously not sharing total points, but they all look very healthy.  Let me know if you try any of them!

Shrimp with Fresh Herbs - 4 points (1/4 recipe). Any kind of fish or seafood is very low in points, so it can be a good choice if you are watching your weight.  In addition, it is really healthy and delicious.  Serve with 1/2 cup rice (3 points) and a salad with reduced fat dressing (2 tablespoons is 2 points).  Add ons for family could be bread, biscuits, cornbread, and/or dessert.

Vegan Spring Rolls with Peanut Sauce - 4 points per roll.  These rolls are loaded with veggies and do not require any cooking.  Nearly all the points are from the peanuts or peanut butter, and you could always experiment with cutting the quantity down, but I think it might be detrimental to the taste and/or consistency of the sauce. Another way to minimize the points might to be very sparing when dipping in the sauce. Add ons for family could be rice and/or dessert.



French Onion Soup - 6 points (1 1/2 cups soup, 1 slice French bread, 1/4 cup cheese per serving). This recipe is a little more involved than what I usually post, but it is so worth it! Add ons for family could be a meat dish and/or dessert.
