Weight Watching - Week 12

Looking over my recipes for this week, I seem to be on somewhat of a garlic kick!  Totally unintentional, but then I use garlic a lot in cooking for myself.

Skillet Taco Salad - 7 points. (1/4 recipe without added oil, cheese, sour cream or tortilla chips). This a good family-pleaser.  Feel free to add cheese (1/2 oz is 2 points), lite sour cream (2 tablespoons is 2 points), or crushed tortilla chips (6 chips is 2 points).  Add ons for family could be extra cheese, crushed tortilla chips, sour cream or feta cheese, and/or dessert.

Lemon Garlic Pork Chops - 6 points. (4 oz. of meat, 1 tablespoon oil in marinade, 1 tablespoon oil to brown chops.)  This needs to marinate, so plan on putting together first thing in the morning and refrigerate until ready to cook.  Serve with roasted veggies, rice (1/2 cup is 3 points), potatoes (1/2 cup is 2 points), fresh fruit or a salad with lite dressing (2 tablespoons dressing is 2 points).  Add ons for family could be mashed potatoes, crusty bread, and/or dessert.


Garlic Yogurt Baked Chicken - 4 points. (1/4 recipe made with total of one pound of chicken breast). This requires a minimum of 4 hours of marinating time, so put together first thing in the morning and refrigerate until ready to cook. I made this and it was excellent, but I used chicken legs instead because that is what I had on hand.  I also added lemon slices on top of the chicken as shown in the picture, but not included in the recipe.  Serve with roasted veggies,  rice (1/2 cup is 3 points), potatoes (1/2 cup is 2 points), fresh fruit or a salad with lite dressing (2 tablespoons dressing is 2 points).  Add ons for family could be cornbread, biscuits, potato salad, and/or dessert.

Honey Garlic Shrimp - 5 points (1/4 recipe).  This is really quick and easy, and most of the points come from the 4 tablespoons of honey used in the recipe.  You could shave some points off by cutting back, but it is already very low in points.  Serve with 1/2 cup rice (3 points), salad with 2 tablespoons lite dressing (2 points), fruit salad, or a crudité platter. Add ons for family could be bread, potato salad, dip for crudites, and/or dessert.

Balsamic Vegetables with Lemon Parsley Rice - 7 points. (1/2 cup of cooked rice cut oil and brown sugar in half.).  Leave the extra rice for the family and double up on the veggies to make it more filling.  This could also be used as a side dish. Add ons for family could be bread and/or dessert.

Slow Cooker Split Pea Soup - 8 points. (1/6 recipe made with 1/2 pound of lean cooked ham.)  You can cook without the ham, but it adds a lot of flavor and only 1 point per serving. Add ons for family could be cornbread, crusty bread, and/or dessert.
